Thanksgiving Wonders from Annabel Karmel!!

Here are a couple fun recipes for Thanksgiving! These make a delicious accompaniment to the Thanksgiving meal and this one is good with or without the mini marshmallow topping.

All kids love anything with marshmallows, so spice up Turkey Day this year with

Fluffy Marshmallow Sweet Potatoes (serves 6):

Ingredients

3 sweet Potatoes (about 2 pounds total)

2 tablespoons unsalted butter

1/3 cup Marshmallow Fluff

1 large egg

¼ teaspoon ground cinnamon

½ teaspoon salt and a little freshly ground black pepper

1 cup mini marshmallows

Preheat the oven to 400°F. Wash and prick the sweet potatoes and bake for 1 hour. Allow the potatoes to cool a little. Cut in half lengthwise, scoop out the flesh, and put into a bowl. Mash together with the butter and Marshmallow Fluff. Beat in the egg and mix in the cinnamon, salt, and pepper. Transfer to a lightly buttered 9×13-inch baking dish. Bake for 25 minutes. Top with the mini marshmallows and bake for an additional 5 minutes.

If your picky eater won’t touch turkey, try these Annabel’s Chicken Dippers (serves 4):

Ingredients

2 boneless, skinless chicken breasts

¼ cup freshly grated Parmesan cheese

¼ cup grated Cheddar cheese

¼ cup dried bread crumbs

½ teaspoon paprika

¼ to ½ teaspoon cayenne pepper

Salt and freshly ground black pepper

1 large egg, lightly beaten

2 tablespoons all-purpose flour

1/3 cup sunflower or other vegetable oil for frying

Cut each chicken breast into ½-inch strips. Mix together the Parmesan, Cheddar, bread crumbs, paprika, cayenne, and salt and pepper to taste. Place the egg in a shallow dish, the flour in another, and the cheesy bread crumb mixture into a third. Dip each chicken strip first into the flour, then into the beaten egg, and finally coat with the breaded crumb mixture.

Pour the oil into a frying pan and cook the chicken over medium heat in batches, taking care not to crowd the pan. Sauté for about 2 minutes on each side until golden. Drain on paper towels.
